BBC Gujarati went inside the kitchens at Ambaji temple, where mohanthal prasad is prepared on a huge scale, with around 40 lakh boxes planned, for pilgrims who walk from far away for the Bhadarvi Poonam fair. Besan, ghee and sugar are roasted and stirred in enormous pans by teams of cooks.

At Hiralal Halwai in Shahdara, Delhi, kaju katli is made in huge batches: cashew paste is cooked down in a wide kadhai and worked by hand until it can be rolled thin and cut into diamonds. The same halwai craft, with roasted besan and ghee instead of cashew, gives the besan laddoo in your box.
